Avocado Toast-Before It Was Cool!

I love avocado toast, love it, and then it became this huge thing that they charge up to $23 in a lot of places in Los Angeles just to get it. Why is it so popular??
WELL---so many reasons.

I started doing it about twenty years ago when I ran out of butter but wanted toast so I took out some guacamole from the night before and spread it over my toast, and BOOM! A love story.
Then, the whole world followed me! I must be a trendsetter. Hahaha--seriously.
The photo above is a stock photo with an egg on it, and that's one way, but if you are vegan, there are no eggs.
Here is how I love mine.

This photo is one that I took of a breakfast a couple of weeks ago.
It's simple, takes about 5 minutes to make, and is healthy, filling, and yummy!
You can make your own guacamole and or buy it premade-at the grocery store these days, they have single-serve ones already made, which is great and easy and then you don't have to do the whole "is this avocado ripe yet, when will it be ripe, or it is all brown" dance that we all do with them.
Whole grain bread (toast to whatever you like. I do it just enough to make the bread not soggy, so light setting.)
Avocado smashed down or guacamole
Cherry or any small tomatoes sliced in half
You can also make a balsamic glaze at home or buy it already made.
I also use a sprinkle of spices, usually an Italian spice blend from Penzeys or any of their blends. And if I have them, CAPERS to add some saltiness.
It's so easy and so healthy.
Avocados are great for inflammation, they are a good fat, and they are filling.
Sometimes I also make this with some greens on the side drizzled with olive oil.

Great for lunch or for a light dinner as well.

I like to add red onion to the salad, and then I don't put anything on top of the avocado toast itself.
I will be sharing more recipes because this is one of my favorite things to eat.
Maybe all these years of living in California has turned me into a California-avocado-eating-person, but yes, I LOVE them!

I also did this while living in Chicago, Seattle, Milwaukee, and New York.
I once went on a diet, and they said, "No avocados,"--so I dropped it! Haha
